Pumpkin Cake Mix Cupcakes

Pour batter into muffin cups evenly about 3 4 full.

Pumpkin cake mix cupcakes. Mix together the cake mix sugar oil water eggs pumpkin puree pumpkin spice and cinnamon. Blend cake mix pumpkin eggs oil and water in large mixer bowl until moistened. Pour batter into prepared muffin cups filling 3 4 full. Pour the batter into a greased cake pan and bake until a toothpick comes out mostly clean.

To make these pumpkin spice cupcakes combine the cake mix plus ingredients on back minus the water pumpkin pie spice and pumpkin puree. Preheat your oven to 350 degrees f. Prepare the cake mix as directed but with the following change. Divide batter evenly among muffin cups about two thirds full.

Blend cake mix pumpkin puree eggs water and oil in a large bowl at low speed until moistened. Bake for 18 to 23 minutes or until wooden pick inserted in center comes out clean. Remove to wire racks to cool completely. Spoon batter into muffin tins and bake for approximately 15 minutes or until a toothpick inserted into cupcake comes out clean.

Divide the batter among the prepared muffin tins lined with paper liners and bake at 350 degrees until a toothpick inserted into the center of a cupcake comes out. Stir for 2 minutes until the batter is super smooth. Increase speed to medium and beat for an additional 2 minutes. Place cupcake liners in 24 muffin cups or grease muffin cups.

Stir spice cake mix and pumpkin together until a thick batter emerges and the spice cake mix is completely mixed into the pumpkin. Add vanilla and cinnamon and mix well. In large bowl beat cake mix pumpkin water oil eggs and pumpkin pie spice with electric mixer on low speed 30 seconds then on medium speed 2 minutes scraping bowl occasionally. Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions.

Cool in pans on wire racks for 10 minutes.
